Instructions
- Lay the cucumbers on a cutting board and smack them hard with the flat of a chef's knife or a rolling pin until they split and crack — the craggy surfaces are the whole trick.
- Cut into rough 4 cm / 1.5 inch chunks. Toss with the salt and leave in a colander 10 minutes to draw out water; pat dry.
- Whisk the soy sauce, vinegar, sugar, sesame oil, garlic, chili, and Sichuan peppercorn until the sugar dissolves.
- Toss the cucumbers with the dressing; finish with cilantro and sesame seeds. Serve cold, within the hour.
Notes & Substitutions
- Salting first is what keeps it crisp and punchy instead of watery — don't skip the 10 minutes.
- Black vinegar brings smoky depth; rice vinegar makes it cleaner and sharper. Both are correct, different moods.
- Add-ins that work: julienned carrot, thin-sliced shallot, a handful of crushed roasted peanuts, or cubed avocado (goes creamy).
- Make it a light lunch: toss with cubed cold tofu or shredded chicken.
Storage & Make-Ahead
- Best within 1 hour of dressing — cucumbers keep draining as they sit.
- Dressed leftovers keep 1 day refrigerated (softer but still tasty).
- The dressing keeps a week in the fridge; smash fresh cucumbers to order.
